Limber de Coco is a refreshing Puerto Rican treat made with creamy coconut milk and sweetened with sugar. These coconut icee popsicles are perfect for hot summer days, offering a tropical escape in every bite.
Ingredients:
- 2 cups coconut milk
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup shredded coconut flakes
Instructions:
Put sugar, vanilla extract, and coconut milk in a saucepan and mix them together
Stir it every so often while heating over medium-low heat until the sugar melts
To cool down, take it off the heat and let it sit where it is
Add coconut flakes that have been shred
Place the mix into popsicle molds
Put in the popsicle sticks and freeze until solid, which should take at least 4 hours
Run warm water over the outside of the molds for a few seconds to get the popsicles out of them
