  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup chopped nuts optional
  • 1/2 cup raisins or dried cranberries optional

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with paper liners

In a large mixing bowl, combine the butternut squash puree, almond flour, oat flour, coconut flour, and brown sugar

Mix well

Add the eggs, applesauce, melted coconut oil, and vanilla extract to the mixture

Stir until everything is well combined
