Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can 10 oz diced tomatoes with green chilies
- 4 cups beef broth
- 1 packet taco seasoning check for low carb option
- 1 cup cauliflower rice
- 1/2 cup heavy cream
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, avocado, cilantro
Instructions:
In a large pot, brown the ground beef over medium heat until fully cooked
Add the diced onion, bell pepper, and minced garlic to the pot
Cook until vegetables are tender
