Chocolate Brownie Cakes with Raspberries and Maltesers

Savor the rich, chocolatey goodness of these little brownie cakes with crunchy Maltesers and tart raspberries. Ideal for anyone who enjoys chocolate

Ingredients:

  • 200g dark chocolate, chopped
  • 200g unsalted butter
  • 250g granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 150g all-purpose flour
  • 50g cocoa powder
  • 1/2 teaspoon salt
  • 150g fresh raspberries
  • 100g Maltesers malted milk balls

Instructions:

Preheat your oven to 180C 350F and line a muffin tin with cupcake liners

In a microwave-safe bowl, melt the dark chocolate and butter together in 30-second intervals, stirring until smooth

Allow it to cool slightly

In a separate bowl, whisk together the sugar, eggs, and vanilla extract until well combined

Pour the melted chocolate mixture into the egg mixture and whisk until smooth

Sift in the flour, cocoa powder, and salt

Gently fold them into the chocolate mixture until no lumps remain

Carefully fold in the fresh raspberries and crushed Maltesers

Divide the batter evenly among the cupcake liners in the muffin tin

Bake for approximately 20-25 minutes or until a toothpick inserted into the center of a brownie cake comes out with a few moist crumbs clinging to it

Allow the brownie cakes to cool in the tin for about 10 minutes, then transfer them to a wire rack to cool completely

Once cooled, you can decorate them with additional raspberries and Maltesers if desired
