Ingredients:
- 2 cups of brewed coffee
- 1/2 cup of granulated sugar
- 2 envelopes of unflavored gelatin
- 1/2 cup of cold water
- 1/2 cup of heavy cream
- 1 teaspoon of vanilla extract
- Whipped cream and chocolate shavings for garnish
Instructions:
Brew 2 cups of strong coffee and let it cool to room temperature
In a saucepan, combine 1/2 cup of granulated sugar and 1/2 cup of brewed coffee
Heat over medium heat, stirring until the sugar is completely dissolved
Remove from heat
In a separate bowl, sprinkle 2 envelopes of unflavored gelatin over 1/2 cup of cold water
Let it sit for a few minutes to bloom
Pour the sugar-coffee mixture over the bloomed gelatin and stir until the gelatin is completely dissolved
Stir in the remaining 1 1/2 cups of brewed coffee
Pour the mixture into a square or rectangular dish and refrigerate for 4-6 hours, or until the Coffee Jell-O is set
Once set, cut the Coffee Jell-O into cubes
In a separate bowl, whip 1/2 cup of heavy cream until soft peaks form
Stir in 1 teaspoon of vanilla extract
Serve the Coffee Jell-O cubes in individual bowls or glasses, top with a dollop of whipped cream, and garnish with chocolate shavings
