Ingredients:
- 1 lb ground beef
- 2 shallots, finely chopped
- 2 cloves garlic, minced
- 2-3 Thai birds eye chilies, minced adjust to taste
- 1/4 cup fresh lime juice
- 3 tablespoons fish sauce
- 1 tablespoon sugar
- 2 tablespoons toasted rice powder
- 1 cup fresh cilantro leaves
- 1/2 cup fresh mint leaves
- 1/2 cup fresh Thai basil leaves
- Lettuce leaves, for serving
Instructions:
In a large skillet or wok, cook the ground beef over high heat until browned and cooked through
Break it up into small pieces as it cooks
Remove the cooked beef from the skillet and set it aside
In the same skillet, add a bit of oil if needed, then saut the shallots, garlic, and Thai birds eye chilies until fragrant
Add the cooked beef back to the skillet and stir well
In a small bowl, mix together the lime juice, fish sauce, and sugar
Pour this mixture over the beef and stir-fry for a couple of minutes
Remove the skillet from heat and stir in the toasted rice powder
Add the fresh cilantro, mint, and Thai basil leaves to the beef mixture
Toss everything together
Serve the Thai Beef Larb on lettuce leaves as a wrap or in a bowl
