A creamy and tangy dip made with roasted cherry tomatoes, Greek yogurt, and fresh herbs, perfect for parties or gatherings.
Ingredients:
- 2 cups cherry tomatoes
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
- 1 tablespoon lemon juice
Instructions:
Preheat oven to 400F 200C
In a baking dish, toss cherry tomatoes and minced garlic with olive oil, salt, and pepper
Roast in the preheated oven for 20-25 minutes until tomatoes are soft and slightly caramelized
Allow the roasted tomatoes to cool slightly
In a food processor, combine roasted tomatoes, Greek yogurt, chopped basil, chopped parsley, and lemon juice
Blend until smooth
Adjust seasoning with salt and pepper if needed
Transfer the dip to a serving bowl
Garnish with additional chopped herbs if desired
Serve with chips, crackers, or fresh vegetables
