Ingredients:
- 1 cup all-purpose flour
- 1/3 cup cocoa powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1 large egg yolk
- 3/4 cup creamy peanut butter
- 1/3 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/3 cup semisweet chocolate chips
- 1/2 teaspoon vegetable oil
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a bowl, whisk together the flour, cocoa powder, and salt
In another bowl, beat the butter and granulated sugar until creamy and smooth
Add the vanilla extract and egg yolk to the butter mixture and mix well
Gradually add the dry ingredients to the wet ingredients and mix until a dough forms
Roll the dough into 1-inch balls and place them on the prepared baking sheet
Use your thumb or the back of a teaspoon to make an indentation in the center of each cookie
Bake the cookies for 10-12 minutes, or until set
While the cookies are baking, prepare the filling by mixing together peanut butter, powdered sugar, and vanilla extract until smooth
Once the cookies are out of the oven, gently redefine the indentations if needed
Fill each indentation with the peanut butter mixture
In a microwave-safe bowl, melt the chocolate chips and vegetable oil in 20-second intervals, stirring in between, until smooth
Carefully spoon a small amount of melted chocolate into the center of each peanut butter-filled indentation
Allow the chocolate to set before serving or enjoying
