Ingredients:
- 1 cup pumpkin puree
- 1/2 cup coconut oil, melted
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 2 cups rolled oats
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp salt
- 1/2 cup vegan chocolate chips or chopped nuts optional
Instructions:
Preheat oven to 350F 175C
In a large mixing bowl, combine pumpkin puree, melted coconut oil, maple syrup, and vanilla extract
In another bowl, mix together oats, flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt
Gradually add dry ingredients to wet ingredients and mix until well combined
If desired, fold in vegan chocolate chips or chopped nuts
Drop spoonfuls of dough onto a lined baking sheet, leaving space between each cookie
Bake for 12-15 minutes, or until cookies are golden brown and set
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
