Ingredients:
- 6 large eggs
- 1/4 cup sun-dried tomatoes, chopped
- 4 strips bacon, cooked and crumbled
- 1/4 cup grated Parmesan cheese
- 1/4 cup diced red bell pepper
- 2 tablespoons chopped fresh basil
- Salt and pepper to taste
- Cooking spray
Instructions:
Preheat your oven to 350F 175C
In a mixing bowl, whisk together the eggs, sun-dried tomatoes, crumbled bacon, grated Parmesan cheese, diced red bell pepper, chopped fresh basil, salt, and pepper
Grease a muffin tin with cooking spray
Pour the egg mixture evenly into each muffin cup, filling them about 3/4 full
Bake in the preheated oven for 15-20 minutes or until the frittatas are set and slightly golden on top
Remove from the oven and let them cool for a few minutes before gently loosening the frittatas from the muffin tin using a knife or spoon
Serve warm, garnished with extra fresh basil if desired
