Easy Boneless Grilled Chicken Thighs Stirfry

Colorful vegetables and flavorful grilled chicken thighs are combined in this quick and simple stir-fry. A delicious and nutritious weeknight dinner thats just right.

Ingredients:

  • 4 boneless chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup snap peas
  • 1/2 cup carrots, julienned
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions:

To make the marinade, combine the soy sauce, sesame oil, honey, rice vinegar, minced garlic, and minced ginger in a bowl

Pour the marinade over the boneless chicken thighs in a ziplock bag

After sealing the bag, give the chicken a massage with the marinade

For optimal flavor, marinate for at least 30 minutes or overnight in the refrigerator

Over high heat, preheat a wok or large skillet

Pour in the vegetable oil and heat through

After removing the chicken from the marinade, shake off any leftover liquid

Add the chicken to the heated wok and stir-fry it for 45 minutes on each side, or until its cooked through and has a hint of caramelization

Before slicing the chicken into thin strips, take it out of the wok and give it a few minutes to rest

Add the bell peppers, carrots, snap peas, and broccoli to the same wok

Stir-fry the vegetables for 34 minutes, or until they are crisp and tender

Add the sliced chicken and vegetables back to the wok

Give it another two minutes of stir-frying so the flavors can combine

To taste, add salt and pepper for seasoning

Over cooked rice, serve the stir-fried chicken and vegetables
