Gluten-Free Oatmeal Crepes

These gluten-free oatmeal crepes are a delicious and healthy breakfast option that is 21 Day Fix approved. They are made with oat flour, making them suitable for those with gluten sensitivities. Fill them with your favorite toppings for a satisfying meal.

Ingredients:

  • 1 cup oat flour
  • 2 eggs
  • 1 cup unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • Cooking spray or oil for the pan

Instructions:

Whisk the eggs, almond milk, vanilla extract, salt, and oat flour together in a bowl until a smooth batter forms

Put a nonstick skillet or crepe pan on medium heat and use cooking spray or oil to lightly coat it

Swirl a little of the batter around in the pan to make it spread out thinly and evenly

This will make a crepe

After one to two minutes of cooking, the edges should start to come off and the bottom should get a little brown

Flip the crepe carefully and cook the other side for another minute or two

If you need to, add more cooking spray or oil to the pan and do it again with the rest of the batter

Top the oatmeal crepes with your favorite things, like honey, nut butter, fresh fruit, or yogurt

Serve them hot
