Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup chopped pecans
- Cinnamon-Sugar Mixture:
- 1/4 cup granulated sugar
- 1 tablespoon ground cinnamon
- Cream Cheese Icing:
- 4 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions:
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
Beat in the eggs, one at a time, and then add the vanilla extract
In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Stir in the chopped pecans
Chill the cookie dough in the refrigerator for at least 1 hour
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a small bowl, mix together the granulated sugar and ground cinnamon for the cinnamon-sugar mixture
Roll the chilled cookie dough into 1-inch balls, then roll each ball in the cinnamon-sugar mixture to coat evenly
Place the coated cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely
For the cream cheese icing, beat together the softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy
Once the cookies are completely cooled, drizzle or spread the cream cheese icing over the top of each cookie
Allow the icing to set before serving
