Grilled Chicken Lettuce Wraps

Instead of buns, these grilled chicken lettuce wraps are a tasty and healthy choice. They are great for barbecues because they are low in carbs and gluten-free and are full of fresh, tasty ingredients.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 large lettuce leaves such as iceberg or romaine
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions:

Preheat the grill to medium-high heat

In a bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper to create a marinade

Coat the chicken breasts with the marinade and let them sit for 10-15 minutes

Grill the chicken breasts for 6-8 minutes per side or until fully cooked

Remove the chicken from the grill and let it rest for a few minutes before slicing it thinly

Place 2-3 slices of grilled chicken on each lettuce leaf

Top with cherry tomatoes, red onion, avocado slices, and cilantro

Serve with lime wedges on the side
